St. Peter's Fish and Chicken Wings

by: Mary Ann Bolanos

On 22 February is the Feast of St. Peter. In honor of
the Saint, I thought of the family recipe of
the great great grand nephew of
Dr. Jose Rizal - Jerome Bautista.
The favorite of their family.

Jerome, I  and Queenie were talking about recipes and food.

Her elder sister who is in the the United States bakes
perfect different colored
macaroons.

He shared some of his favorite home cooked recipes which his
Mom and "Ate" (elder sister) love to cook.

Here is the recipe which I hope you will enjoy cooking when
staying at the furnished apartment in Novaliches:

Tilapia (St. Peter's Fish)

Ingredients:

Fish Tilapia
Sliced Ginger
Soy Sauce
Green Onions
Vegetable oil (heated not boiling)

My diet version: I use cold pressed coconut oil or
virgin coconut oil.

Procedure:

1. Clean whole Tilapia very well.
2. Rub with sliced ginger and leave on top.
3. Place in a microwave-safe dish.
4. Cook in microwave oven 5-6 mins depending on size.
5. Remove ginger slices.
6. Do not remove any drippings from the fish on the dish.
7. Pour soy sauce all over the fish. (1/8 c per fish or as desired)
8. Sprinkle with 2" green onions on top of fish then pour
heated (not boiling) vegetable oil over fish.
9. Serve hot.

Variation: replace part of soy sauce with oyster. e.g.
1/8 soy sauce and 1/8 oyster sauce.

Chicken Wings Recipe

Ingredients:

Chicken Wings
Cooking Oil (I prefer virgin coconut oil or cold pressed
virgin coconut oil. Great for those on diet)
Sesame seeds

Sauce:

Sesame Oil
Soy Sauce

1. Fry 1 kg. cut chicken wings in half at joint.
Dredge in flour then fry in oil until brown.
2. Remove excess oil with paper towels.
3. Toast sesame seed on a pan until light brown.
4. Add to dipping sauce: 1/2 c soy sauce, 1/4 c sesame oil.
(Optional) Add sugar to taste.

My diet version: I usually add on wild honey instead of sugar,
7 pieces of squeezed calamansi. (Serves 5 or 7)

Tip: never heat sesame oil because it turns into trans fat.
